Mashed Storage Kohlrabi

While most of you are probably familiar with kohlrabi at this point, storage kohlrabi is a bit of different beast. These massive kohlrabi weigh up to four pounds and can be eight inches across. We have heard from a number of people that they, usually a long time ago, at these giant kohlrabies cooked and mashed, just like potatoes. To that end, we have found some mashed kohlrabi recipes for you to use.

Mashed Storage Kohlrabi

  • storage kohlrabi

  • butter

  • milk, cream, or half and half

  • salt and pepper to taste

  • optional: rosemary, garlic, thyme, bacon

Instructions

Peel the kohlrabi down to the white interior, making sure to remove all the fibrous outside layer.

Cut the kohlrabi into approximately one inch chunks.

Cover the kohlrabi with cold water. Bring to a boil.

Boil until a knife or fork can be easily inserted and removed from the kohlrabi pieces.

Mash, mix, or food process to get your preferred texture of mashed kohlrabi.

Add your liquid, butter, salt and pepper to your desired taste and texture.
